Chef Sébastien Chauchat’s cuisine is rooted in a seasonal Mediterranean spirit, sincere and inspired by the Corsican terroir. As the months pass, the dishes evolve in harmony with nature, showcasing local ingredients carefully sourced from committed producers. Foraging plays an essential role, revealing wild herbs, flowers, and the flavours of the maquis, subtly woven into the Chef’s creations.
Precise and sensitive, this cuisine tells the story of a close connection with the land, where each ingredient finds its rightful place. A respectful, terroir-driven approach that celebrates seasonality and authenticity, while allowing creativity and elegance to shine through.

Mountain desserts find a contemporary expression here, highlighting emblematic products such as chestnut a signature ingredient of the Alta Rocca.
